The Tsunehisa Shiro White Steel Gyuto 210mm is made in Japan from Shirogami (White Paper) #1 or #2 steel with stainless cladding - one of the purest carbon steels produced by Hitachi, renowned for taking an exceptionally fine, razor-sharp edge and sharpening with ease on Japanese water stones.

The Purity of White Steel

Shirogami is one of the simplest, purest carbon steels in Japanese knife-making - a high carbon steel with minimal alloying elements that allows the steel to achieve an exceptionally fine grain structure and take a keener, more refined edge than more complex steels. The stainless cladding protects the reactive core on the sides of the blade, leaving only the cutting edge exposed - meaning the edge is reactive but the rest of the blade is protected. Sharpens effortlessly on Japanese water stones. Made in Japan by Tsunehisa.

Care & Maintenance

  • Hand wash only - never dishwasher
  • Wipe dry immediately after use - the carbon steel core is reactive
  • A natural patina will develop on the edge with use - this is normal and protects the steel
  • Sharpen on Japanese water stones - takes an exceptionally fine edge
  • Apply a light coat of food-safe oil if storing for extended periods
  • Store on a magnetic strip or in a knife block to protect the edge
