Experience Shirogami - Japan's Purest Carbon Steel in a Compact Gyuto

The Tsunehisa Shiro White Steel Gyuto 180mm is made in Japan from Shirogami (White Paper) carbon steel with stainless cladding - one of the purest carbon steels produced by Hitachi, in a compact, agile blade for cooks who prefer precision over reach.

The Specs

  • Steel: Shirogami (White Paper) carbon steel core - stainless clad, San Mai
  • Blade length: 180mm | Double bevel
  • Edge grind: Even 50/50 double bevel
  • Handle: Pakkawood (Western Yo style)
  • Note: Reactive core - wipe dry immediately after use
  • Origin: Japan

The Purity of White Steel

Shirogami is one of the simplest, purest carbon steels in Japanese knife-making - a high carbon steel with minimal alloying elements that achieves an exceptionally fine grain structure and takes a keener, more refined edge than more complex steels. The stainless cladding protects the reactive core on the sides of the blade. At 180mm, this is the agile option - quicker through herbs, more precise on smaller ingredients. Sharpens effortlessly on Japanese water stones. Made in Japan by Tsunehisa.

Care & Maintenance

  • Hand wash only - never dishwasher
  • Wipe dry immediately after use - the carbon steel core is reactive
  • A natural patina will develop on the edge with use - this is normal and protects the steel
  • Sharpen on Japanese water stones - takes an exceptionally fine edge
  • Apply a light coat of food-safe oil if storing for extended periods
  • Store on a magnetic strip or in a knife block to protect the edge
