The M105 Utility Knife is part of Tsunehisa's accessible San Mai range - a double-sided blade with a hard stainless core forged between two layers of softer stainless cladding. The construction keeps the edge hard and keen while the outer layers provide toughness and protection. At 120mm this knife sits between a paring knife and a petty - long enough to work on the board with small ingredients, nimble enough for in-hand tasks like peeling, trimming, and segmenting. At just 85g it is one of the lightest knives in the Tsunehisa range, making it ideal for extended prep sessions where fatigue matters. The thin 1.5mm spine keeps it agile and responsive. Made in Japan.
