The Santoku
The M105 Santoku is part of Tsunehisa's accessible San Mai range - a double-sided blade with a hard stainless core forged between two layers of softer stainless cladding. The construction keeps the edge hard and keen while the outer layers provide toughness and protection. The santoku profile handles meat, fish, and vegetables with equal confidence - the name translates as three virtues. At 165mm and just 115g it is one of the lightest and most nimble santoku in the Tsunehisa range, well-suited to cooks who prefer a shorter, more responsive blade for daily prep. The thin 1.5mm spine makes it exceptionally agile through vegetables and proteins. Made in Japan.
Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing
- Hone regularly on a ceramic rod or leather strop
- Sharpen on Japanese water stones (1000/3000 grit)
