The Tsunehisa G3 Nashiji Red Petty is a small knife with serious credentials. G3 Ginsan steel is made by Hitachi Metals - a fine-grained, high-carbon stainless steel that sharpens and performs like classic white carbon steel, without the rust risk. At 60 HRC it takes a keen edge and holds it well through daily prep. The nashiji pear-skin finish reduces drag and prevents food from sticking to the blade face. At 135mm this petty sits between a paring knife and a utility knife - nimble enough for in-hand work like peeling and trimming, long enough to slice shallots, segment citrus, and break down small proteins on the board. The red pakkawood handle makes it easy to identify in a busy kitchen and provides a secure, comfortable grip. Made in Tosa, Japan by Tsunehisa.
