In nimai construction, the harder AUS-8 core is supported by a softer stainless layer that adds toughness and protects the edge geometry. At 240mm, this Sujihiki is the go-to length for slicing fish, meat, and proteins in a single clean pull-stroke with no tearing. The tsuchime hammered finish creates air pockets that reduce drag and prevent food from sticking to the flat. Made in Japan by Tsunehisa.
