The Tsunehisa AUS-8 Tsuchime Kiritsuke 210mm is made in Japan using a nimai (2-layer) construction - a harder AUS-8 core forge-welded to a softer stainless cladding, finished with a tsuchime hammered surface. The kiritsuke profile combines the flat edge of a nakiri with the pointed tip of a gyuto - a hybrid blade for cooks who want one knife that does everything.

The kiritsuke is traditionally a single-bevel knife reserved for executive chefs in Japan - this double-bevel version makes the distinctive angled tip profile accessible to all cooks.
