The Gyuto
AUS-8 is a high-chromium Japanese stainless steel from Aichi steelworks - corrosion-resistant, easy to sharpen, and a practical everyday performer. In nimai construction, the harder AUS-8 core is supported by a softer stainless layer that adds toughness and protects the edge geometry. The gyuto is Japan's all-purpose chef's knife - a curved blade designed for rocking cuts through vegetables, proteins, and herbs. At 180mm it is the most compact gyuto size, ideal for smaller hands or tighter bench space. The tsuchime hammered finish reduces drag and prevents food from sticking. Made in Japan by Tsunehisa.
