The Tsunehisa AUS8 Sujihiki
AUS8 is a Japanese stainless steel from Aichi Steel with a well-balanced composition - high chromium (14.5%) for excellent corrosion resistance, carbon (0.7-0.75%) for hardness, and additions of vanadium and molybdenum for wear resistance and toughness. At 58-60 HRC it is a practical, easy-to-maintain steel that holds a working edge through daily prep and sharpens readily on Japanese water stones. The sujihiki is the Japanese slicing knife - a long, narrow blade with minimal height designed to glide through proteins in long, single-stroke cuts with minimal drag. At 270mm it is the longer sujihiki option, ideal for portioning whole fish, slicing roasts, and carving large cuts of poultry and beef. The thin 1.3mm spine and low blade height minimise resistance through the cut, and the engraved master's signature on the right side adds a mark of craftsmanship. Made in Japan.
Care and Maintenance
- Hand wash only - never dishwasher
