The Tsunehisa Difference
Tsunehisa is one of Tosa's most respected knife producers, known for delivering top-quality steel at outstanding value. This series uses 440c high-carbon stainless steel laminated in stainless damascus cladding - a combination that delivers excellent edge retention and corrosion resistance at 61 HRC, with the visual appeal of a damascus pattern. The nashiji (pear-skin) finish on the blade flats reduces food sticking and hides minor scratches. The Sujihiki is Japan's answer to the Western carving knife - a long, slender blade designed for slicing proteins in a single clean drawing stroke, producing even, clean slices through roasts, fish, and sashimi.
Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing
- Hone regularly on a ceramic rod or leather strop
- Sharpen on Japanese water stones when needed
- Store flat or in a knife roll to protect the long blade
