The Yanagi-Sashimi
The yanagi - named for the willow leaf its blade resembles - is the definitive Japanese sashimi knife. Its long, narrow, single-bevel blade is designed for one motion: a long drawing cut that slices through fish without compression or tearing, leaving a clean, glistening face on every piece. The single bevel edge is ground on one side only, allowing the flat back to glide along the fish while the hollow grind prevents sticking. At 240mm, this Reigetsu yanagi has the length to handle whole fillets in a single stroke. The natural wood handle and traditional styling make it as beautiful on the bench as it is effective in use.
