The Sashimi Knife

A sashimi knife is a study in restraint - long, thin, and ground on one side only. The single bevel edge is what separates a true sashimi knife from a general slicer: it allows the blade to glide along the flat side while the hollow grind on the back prevents the fish from sticking, producing a cut face that is smooth and clean rather than compressed or torn. Tojiro's DP3 construction brings a VG10 high-cobalt core to the cutting edge - a steel chosen for its hardness and edge retention - clad in high-chrome stainless steel for durability and corrosion resistance. At 60 HRC, the blade holds a fine edge through repeated use. Handcrafted in Niigata, Japan's knife-making capital, and hand-polished to an impeccable finish.

Care & Maintenance

  • Hand wash only, never dishwasher
  • Dry immediately after washing
  • Single bevel edges should not be honed with a standard honing rod - professional sharpening only
  • Sharpen with a whetstone by a professional familiar with single bevel geometry
  • Store on a magnetic strip or in a knife block to protect the blade
