The Sora line uses Shun's Composite Blade Technology - a san mai construction that places high-performance VG10 steel exactly where it matters most, at the cutting edge, while highly corrosion-resistant 420J stainless steel protects and supports the upper blade. The result is a razor-sharp 16° edge with excellent corrosion resistance and easy maintenance. The utility knife's narrower, straighter blade excels at trimming broccoli and green beans, slicing tomatoes and avocados, cutting meats and cheeses, and all the precise smaller tasks where a chef's knife is too much and a paring knife too little. Sometimes called a sandwich knife - and for good reason. The textured polymer handle provides a secure, comfortable grip that's easy to clean and won't harbour bacteria.

Care & Maintenance

• Hand wash only, never dishwasher
• Dry immediately after washing
• Hone regularly with a Shun honing steel to maintain the 16° edge
• Sharpen with a whetstone or professional sharpening service when needed
• Store on a magnetic strip or in a knife block to protect the blade
