The Shun Dual Core has two - alternating layers of VG10 and VG2 high-carbon stainless steel, folded together into 71 micro-layers of Damascus cladding that extend all the way to the cutting edge. The result combines VG10's exceptional hardness with VG2's flexibility and corrosion resistance - both steels reaching the edge simultaneously for a blade that stays sharper, longer. The utility knife's narrower, straighter blade excels at trimming vegetables, slicing meats and cheeses, and all the precise mid-size tasks that define everyday kitchen prep.
