Dual Core. Double the Performance.
Most knives have a single steel core. The Shun Dual Core has two - alternating layers of VG10 and VG2 high-carbon stainless steel, folded together into 71 micro-layers of Damascus cladding that extend all the way to the cutting edge. The result combines VG10's exceptional hardness with VG2's flexibility and corrosion resistance - both steels reaching the edge simultaneously for a blade that stays sharper, longer. The rabbet tang controls weight and enhances manoeuvrability, echoing the construction of traditional samurai swords. The octagon-shaped ebony PakkaWood® handle provides a secure, comfortable grip that won't harbour bacteria. Light, agile, and beautiful - the Santoku for serious cooks.
