Most knives have a single steel core. The Shun Dual Core has two - alternating layers of VG10 and VG2 high-carbon stainless steel, folded together into 71 micro-layers of Damascus cladding. The result is a blade where both steels reach the cutting edge simultaneously, combining VG10's exceptional hardness with VG2's flexibility and corrosion resistance. The flowing Damascus pattern is not just beautiful - it's structural. The Nakiri's flat blade profile is designed for the straight up-and-down chopping motion, delivering clean cuts through cabbage, cucumber, carrot, and everything in between with zero rocking and zero wedging.
Care & Maintenance
- Hand wash only, never dishwasher
- Dry immediately after washing
- Hone regularly with a Shun honing steel to maintain the 16° edge
