Dual Core. Double the Performance.

In traditional Japanese kitchens, only the head chef was permitted to use the Kiritsuke - a mark of skill and seniority. Its long, flat blade excels at the push-cutting and pull-cutting techniques of Japanese cuisine, while the distinctive angled tip allows for the precision work of a much smaller knife. The Shun Dual Core takes this iconic blade further - alternating layers of VG10 and VG2 high-carbon stainless steel folded into 71 micro-layers of Damascus cladding that extend all the way to the cutting edge. Both steels reach the edge simultaneously, combining VG10's exceptional hardness with VG2's flexibility and corrosion resistance for a blade that stays sharper, longer. The rabbet tang controls weight and enhances manoeuvrability, echoing the construction of traditional samurai swords, while the octagon-shaped ebony PakkaWood® handle provides a secure, comfortable grip that won't harbour bacteria.

Care & Maintenance

  • Hand wash only, never dishwasher
  • Dry immediately after washing
  • Hone regularly with a Shun honing steel to maintain the 16° edge
  • Sharpen with a whetstone or professional sharpening service when needed
  • Store on a magnetic strip or in a knife block to protect the blade
