The Shun Dual Core Asian Multi-Prep Knife 11.4cm - known in Japan as a honesuki - is the go-to knife for breaking down poultry, manoeuvring around bones and joints, and any prep work where a larger blade simply can't go. Dual Core steel means it does all of this with an edge that outlasts anything else in its class.

Most knives have a single steel core. The Shun Dual Core has two - alternating layers of VG10 and VG2 high-carbon stainless steel, folded together into 71 micro-layers of Damascus cladding that extend all the way to the cutting edge. The result combines VG10's exceptional hardness with VG2's flexibility and corrosion resistance. The triangular blade shape is purpose-built for the honesuki's primary role - removing breasts from bone, cutting through joint cartilage, and navigating the tight spaces that a chef's knife or utility knife can't reach. It doubles as a nimble prep knife for slicing shallots, trimming vegetables, and any task requiring precision and control. The rabbet tang controls weight and enhances manoeuvrability, while the octagon-shaped ebony PakkaWood® handle provides a secure, comfortable grip that won't harbour bacteria.
Care & Maintenance
- Hand wash only, never dishwasher
- Dry immediately after washing
- Hone regularly with a Shun honing steel to maintain the 16° edge
- Sharpen with a whetstone or professional sharpening service when needed
- Store on a magnetic strip or in a knife block to protect the blade
