Every Part of This Blade Has a Purpose
The edge chops through large vegetables like cabbage, wombok, and daikon with clean, decisive strokes. The flat of the blade doubles as a garlic and ginger smasher. And despite its imposing width, Shun's thinner blade profile keeps it light and easy to manoeuvre - nimble enough for many cooks to use as their everyday chopper and slicer. The VG-MAX steel core is clad in 32 layers of Damascus stainless steel, bead-blasted to reveal its flowing wave-like pattern, while the ebony PakkaWood® D-shaped handle provides a secure, balanced grip. Note: this is a vegetable cleaver - do not use on joints, bones, or meat.
Care & Maintenance
- Hand wash only, never dishwasher
- Dry immediately after washing
- Hone regularly with a Shun honing steel to maintain the 16° edge
- Sharpen with a whetstone or professional sharpening service when needed
- Store on a magnetic strip or in a knife block to protect the blade
