The Shun Classic Scalloped Slicing Knife 22.9cm combines the long, narrow profile of a dedicated slicer with hollow-ground indentations that break suction and let each slice fall cleanly away, keeping every drop of flavour locked inside the meat.

Two Features. One Perfect Slice.
The long, narrow blade lets you cut through a roast, leg of lamb, or whole salmon in a single, uninterrupted stroke - no sawing, no tearing. The hollow-ground scallops along the blade create air pockets that prevent thin slices from clinging to the steel, so each piece falls away cleanly. The result is more flavour in the meat, better presentation on the plate, and less effort at the carving board. The VG-MAX steel core is clad in 32 layers of Damascus stainless steel, bead-blasted to reveal its flowing wave-like pattern, with an ebony PakkaWood® D-shaped handle for a secure, balanced grip.
Care & Maintenance
- Hand wash only, never dishwasher
- Dry immediately after washing
- Hone regularly with a Shun honing steel to maintain the 16° edge
- Sharpen with a whetstone or professional sharpening service when needed
- Store on a magnetic strip or in a knife block to protect the blade
