Why Scalloped?

When slicing soft or sticky foods — cucumber, potato, cheese, cooked meat — a flat blade creates suction that causes food to cling. The hollow-ground indentations on this blade break that suction, allowing each slice to fall cleanly away. The result is faster prep, cleaner cuts, and less frustration.
