The Kiritsuke is the ultimate all-rounder — equally at home julienning vegetables, portioning boneless proteins, or slicing cooked fish with effortless grace. The VG-MAX core delivers a razor-sharp, long-lasting edge, clad in 68 layers of Damascus stainless steel that adds stain resistance and helps food release cleanly from the blade. The slightly curved edge means it handles rocking cuts as naturally as push cuts. The ebony PakkaWood® D-shaped handle is comfortable for both left- and right-handed users, with a full composite tang for light weight and perfect balance. Note: not designed for bone or very thick-skinned vegetables.
Care & Maintenance
- Hand wash only — never dishwasher
- Dry immediately after washing
- Hone regularly with a Shun honing steel to maintain the 16° edge
- Sharpen with a whetstone or professional sharpening service when needed
- Store on a magnetic strip or in a knife block to protect the blade
