Where This Stone Fits in Your Sharpening System

A complete sharpening system runs from coarse to fine. The 400/1000 stone sits in the middle - coarser than a pure finishing stone, finer than the 300 grit repair stone. Use the 400 grit side when a knife is noticeably dull but undamaged, then refine with the 1000 grit side. For a polished razor finish, follow up with a 6000 grit stone such as the Shun 1000/6000 Combination Whetstone. The included rubber tray keeps the stone stable on the bench throughout the sharpening process.

How to Use

  • Soak the stone in water for 5-10 minutes before use
  • Place in the rubber tray for stability
  • Start with the 400 grit side for a dull edge - sharpen at 16° for Shun knives
  • Move to the 1000 grit side to refine the edge
  • Keep the stone wet throughout - use water only, no oil
  • Rinse and dry the stone after use, store flat to prevent warping
  • Flatten the stone periodically with a leveling stone to maintain a flat surface
