Where This Stone Fits in Your Sharpening System
A complete sharpening system typically runs from coarse to fine - repair, sharpen, then finish and polish. The 300/1000 stone handles the first two stages. Use the 300 grit side when a knife has a chip, a rolled edge, or is so dull that a finer stone would take too long. Move to the 1000 grit side to refine the edge after coarse grinding. Follow up with a 6000 grit finishing stone (such as the Shun 1000/6000 Combination Whetstone) to polish the edge to a razor finish.
How to Use
- Soak the stone in water for 5-10 minutes before use
- Start with the 300 grit side only if the edge is chipped or very dull
- Move to the 1000 grit side to refine the edge after coarse grinding
- Sharpen at 16° for Shun knives
- Keep the stone wet throughout - add water as needed
- Rinse and dry the stone after use, store flat to prevent warping
- Flatten the stone periodically with a leveling stone to maintain a flat surface
- Do not use on serrated or single-bevel knives without specialist knowledge
