The Kinju Series
Seki Magoroku is the kitchen knife brand of KAI - one of Japan's largest and most respected cutlery manufacturers, based in Seki, Gifu Prefecture. The Kinju series takes the traditional yanagiba/sashimi profile and pairs it with AUS-8A stainless steel for a blade that's easier to maintain than carbon steel while still delivering the thin, clean slices that Japanese cuisine demands. The single-bevel grind creates a concave back (urasuki) that reduces drag and allows the blade to release cleanly from the cut. The octagonal black PakkaWood handle sits comfortably in the hand through extended prep sessions.
Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing
- Single-bevel knives require whetstone sharpening - sharpen the bevel side only, then lightly deburr the flat back
- Do not use a honing rod - single-bevel geometry requires whetstone maintenance only
- Store on a magnetic strip, in a saya, or in a knife block to protect the edge
