About SanMai

SanMai is a knife-making collective based in Magetan, East Java, Indonesia - founded by Omar, a knife maker working alongside local blacksmiths and craftsmen. The SanMai construction sandwiches a high carbon leaf spring steel core between soft iron cladding, giving the blade a reactive, hard-cutting edge with a tough, forgiving body. The Nashiji etched finish reduces food adhesion and gives the blade a beautiful, textured appearance. The amboyna and rosewood handle is a premium combination - amboyna is one of the world's most prized figured woods. The rosewood saya is included, making this a complete package.

Care and Maintenance

• Hand wash only - never dishwasher
• Dry immediately after use - carbon steel core will rust if left wet
• Apply a light coat of food-safe oil if storing long-term
• Hone on a leather strop
• Sharpen on whetstones (1000/3000 grit recommended)
• Store in the included saya or on a magnetic rack
