The Sabatier Paring Knife 100mm is forged in Thiers, France from high carbon steel - the most versatile paring size, equally at home in hand for peeling and trimming or on the board for slicing small foods, with a harder, longer-lasting edge than standard carbon.

The 100mm paring knife is the most versatile size in the range - long enough to slice garlic cloves, ginger, and small vegetables on the board, compact enough to use in hand for peeling, coring, and trimming with complete control. High carbon steel achieves greater hardness than standard carbon, holding a finer edge through repeated use and making every cut cleaner and more effortless. Forged from a single mass of steel, the blade, bolster, and tang are one continuous piece for exceptional balance. The black POM handle is hand-set on the full tang with three brass rivets.
Care & Maintenance
- Hand wash only - never dishwasher
- Wipe dry immediately after use - high carbon steel will rust if left wet
- Apply a light coat of food-safe oil occasionally to protect the blade
- Sharpen with a whetstone or professional sharpening service when needed
- A natural patina will develop with use - this is normal and protects the steel
- Store on a magnetic strip or in a knife block to protect the edge
