Experience the Reach of a 250mm French Carbon Steel Chef's Knife
The Sabatier Chef's Knife 250mm is forged in Thiers, France from a single mass of carbon steel - built for cooks who want maximum blade length and the authority of French carbon steel for high-volume prep and large-format cutting tasks.
The Specs
- Steel: Carbon steel, forged in a single mass - 54-56 HRC
- Blade length: 250mm (10 in.)
- Handle: Black POM, hand-set on the tang with three brass rivets
- Construction: 100% forged - tempered, ground, and polished crosswise
- Origin: Handcrafted in Thiers, France
Built for Volume
The 250mm blade delivers additional cutting leverage and lets you process more product with fewer strokes - slicing through large roasts, whole fish, and oversized vegetables in a single clean pass. Carbon steel takes a finer edge than stainless and holds it longer under hard use, the reason professional French kitchens have relied on it for centuries. Forged from a single mass of steel, the blade, bolster, and tang are one continuous piece for exceptional balance despite the length. The black POM handle is hand-set on the full tang with three brass rivets.
Care & Maintenance
- Hand wash only - never dishwasher
- Wipe dry immediately after use - carbon steel will rust if left wet
- Apply a light coat of food-safe oil occasionally to protect the blade
- Sharpen with a whetstone or professional sharpening service when needed
- A natural patina will develop with use - this is normal and protects the steel
- Store on a magnetic strip or in a knife block to protect the edge
