A fully forged German carbon steel butcher cleaver, professionally restored by GT Edgeworks (SA) with a custom New Zealand Supplejack timber handle and triple brass pins.

The Gustav Emil Ern Butcher Cleaver
Gustav Emil Ern was a Solingen-based cutlery manufacturer operating during Germany's golden era of blade production - a period when Solingen steel was exported worldwide and synonymous with professional-grade quality. Solingen, known as the "City of Blades", has been the centre of German knife-making since the Middle Ages, and Ern blades were built to the exacting standards that tradition demands. This blade has been treated for rust, cleaned, and professionally sharpened. The handle is crafted from New Zealand Supplejack timber - a rare rainforest hardwood - finished with Constantia Organic finishes, produced in Port Lincoln, SA. Fitted and shaped by Josh at GT Edgeworks, who specialises in reviving vintage knives to heirloom quality.

Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing to prevent rust on carbon steel
- Apply a light coat of food-safe oil periodically to protect the blade
- No honing steel required - take to a professional sharpener when needed
- Store flat or on a magnetic rack away from moisture
