The George Gao Difference
George Gao has been making knives for over 15 years from his Adelaide workshop and is a full member of the Australian Knifemakers Guild - one of the most respected credentials in Australian custom knife-making. The Kiritsuke is a Japanese hybrid knife combining the flat-edged profile of a Nakiri with the pointed tip of a Yanagiba, making it a highly versatile chef's knife suited to both Western and Japanese cutting techniques. The 12C27 stainless steel core delivers excellent edge retention and corrosion resistance at 58 HRC - easy to maintain and practical for daily kitchen use. The African Ebony and Red Gum handle is hand-shaped by George himself, making every knife a unique piece. This is a limited, one-of-a-kind collaboration - not available anywhere else.
