The Murata Difference
Tosa, on the island of Shikoku, has a centuries-old tradition of blade-making - producing everything from agricultural tools to kitchen knives. Murata knives carry that tradition forward, combining Aogami #1 steel - one of the finest high-carbon tool steels in Japanese knife-making - with the kurouchi forge finish that is the hallmark of Tosa craft. Aogami #1 is prized for its exceptional hardness and ability to take and hold a razor-keen edge. The kurouchi finish is left intact from the forge, giving the blade a raw, honest character and offering slightly better rust resistance than a fully polished carbon blade. The santoku is a nimble, well-balanced all-rounder - equally capable at slicing proteins, chopping vegetables, and fine knife work.
Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after use - Aogami #1 will rust if left wet
- Apply a light coat of food-safe oil if storing for extended periods
- Expect a natural patina to develop with use - this is normal and protective
- Hone regularly with a honing rod to maintain the edge between sharpenings
- Sharpen with a whetstone - Aogami #1 responds beautifully to a fine stone
