About Muneishi
Muneishi-hamono was founded in 1955. The third-generation blacksmith, Kosuke Muneishi, carries out every step of production himself - tempering, forging, hammering, and sharpening. This Santoku features an Aogami #2 carbon steel core sandwiched between two layers of stainless steel (Sanmai construction), giving the blade a reactive, ultra-sharp cutting edge with the corrosion resistance of stainless cladding. The Kurouchi finish is left from the forge - raw, rustic, and full of character. At 63-64 HRC, this is an exceptionally hard knife that holds its edge for a long time. The laser-thin grind and lack of thickening makes sharpening straightforward on whetstones.
Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after use
- Hone on a leather strop or fine ceramic rod
- Sharpen on whetstones (1000/3000 grit recommended) - the hard steel rewards patience
- Store on a magnetic rack or in a saya (blade guard)
