The Muneishi Difference
Muneishi-hamono was founded in 1955. The third-generation blacksmith Kosuke Muneishi carries out all steps himself - tempering, forging, hammering, and sharpening - making each knife a true one-of-a-kind piece. Aogami #2 (Blue Paper Steel) is a high-carbon steel prized for its ability to take an exceptionally fine, keen edge and hold it through sustained hard use. At 63-64 HRC it is among the hardest steels used in Japanese kitchen knives. The stainless San Mai cladding protects the reactive carbon core while keeping the blade easy to maintain. The kurouchi finish is left intact on the blade flats, giving the knife a rugged, honest character.
Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing - the carbon steel core is reactive
- Apply a light coat of food-safe oil if storing for extended periods
- Hone regularly; sharpen on a whetstone when needed
- Store on a magnetic rack or in a knife roll
