Experience Third-Generation Blacksmith Craft in an Aogami Kurouchi Gyuto
The Muneishi Aogami SS Clad Gyuto 150mm is hand-forged by Kosuke Muneishi - the third-generation blacksmith of Muneishi-hamono, founded in 1955 in Echizen, Japan. Kosuke carries out every step himself: tempering, forging, hammering, and sharpening. The result is a compact, ultra-thin gyuto with a core of Aogami #2 (Blue #2) carbon steel, protected by two layers of stainless steel cladding in a San Mai construction, and finished with a kurouchi (blacksmith's forge) surface.

The Muneishi Difference
At 150mm this is a compact, nimble gyuto - ideal for those who prefer a shorter blade for precise work, or as a second knife alongside a longer chef's knife. The blade is very thin and manually sharpened with no thickening at the spine, making it exceptionally easy to sharpen and maintain. Aogami #2 (Blue #2) is a high-carbon tool steel made by Hitachi Metals - prized for its ability to take an extremely fine, keen edge and hold it through demanding prep work. The stainless cladding protects the reactive Aogami core while the kurouchi finish adds character and reduces drag. Completely hand-forged - one of a kind.
Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after use - Aogami #2 core will rust if left wet
- The stainless cladding protects the sides but the edge is reactive - wipe and dry after use
- Apply a light coat of food-safe oil if storing for extended periods
- Expect a natural patina to develop on the edge - this is normal and protective
- Sharpen with Japanese water stones - Aogami #2 responds beautifully to fine stones
- Store on a magnetic strip or in a saya to protect the edge
