Completely hand-forged by third-generation master blacksmith Kosuke Muneishi in Echizen, Japan, this Kiritsuke is a one-of-a-kind kitchen tool. The Kiritsuke is the prestige knife of the Japanese kitchen - traditionally reserved for the head chef - combining the length of a gyuto with the flat profile of a yanagiba. The Aogami #2 carbon steel core delivers exceptional sharpness and edge retention at 63-64 HRC, while the two outer layers of stainless steel protect the blade and simplify maintenance. The Kurouchi finish - the blacksmith's hammer-forged black scale - is left intact, giving the blade a rustic, artisan character while providing natural rust resistance. Muneishi-hamono has been forging blades since 1955, and every step is carried out by Kosuke-san himself. No two knives are identical.
Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing
- Hone regularly with a ceramic or fine honing rod
- Sharpen on a whetstone (1000/3000 grit recommended)
- Apply a light coat of camellia oil if storing long-term
- Store on a magnetic strip or in a knife block
