This vintage Misono No. 61 Chinese cleaver combines a broad 190mm blade with a thin stainless profile designed for vegetables, boneless proteins and efficient ingredient transfer. It is a one-of-a-kind Japanese chuka bocho, not a heavy bone cleaver.

- Hone lightly with a smooth steel or fine ceramic rod when required
- Sharpen on suitable Japanese water stones
- Store securely in a sheath, knife block or knife roll
