VG1 - The Underrated Stainless
VG1 is closely related to the more widely known VG10 - similar in terms of edge retention and corrosion resistance, but often overlooked in favour of its more famous sibling. The Masutani VG1 Tsuchime is ground thin behind the edge, giving it a laser-like cutting feel that belies its price. The hammered tsuchime finish creates air pockets between blade and food, reducing drag and preventing thin slices from sticking. The octagonal black Chacate handle sits comfortably in a pinch grip and adds a premium aesthetic. Made in Echizen, Japan - a region with centuries of knife-making heritage.
Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing
- Hone regularly with a ceramic or fine honing rod
- Sharpen on a whetstone when needed - VG1 responds well to Japanese water stones
- Store on a magnetic strip or in a knife block to protect the edge
