VG1 stainless steel is closely related to VG10 in terms of corrosion resistance and edge retention, but at a more accessible price point. The thin laser grind behind the edge means the Masutani cuts through vegetables with minimal resistance - onions, carrots, cabbage, and herbs all yield cleanly without the wedging you get from thicker blades.
