The Nakiri Advantage
The nakiri is Japan's dedicated vegetable knife - a flat-profiled, double-bevelled blade designed for the push-cut and pull-cut style that keeps the full edge in contact with the board. VG1 stainless steel is closely related to VG10 in terms of corrosion resistance and edge retention, but at a more accessible price point. The thin laser grind behind the edge means the Masutani cuts through vegetables with minimal resistance - onions, carrots, cabbage, and herbs all yield cleanly without the wedging you get from thicker blades. The tsuchime hammered finish reduces drag and helps food release from the flat. The octagonal black chacate handle is lightweight and well-balanced for extended prep sessions.
Care and Maintenance
