About the Masutani Kokuryu
The Gyuto is Japan's answer to the Western chef's knife - a curved, pointed blade designed for rocking cuts, slicing, and general-purpose prep. At 180mm, this is the compact end of the Gyuto range, making it ideal for smaller hands, tighter bench space, or cooks who prefer a nimble blade. Masutani's Kokuryu line uses VG10 stainless steel ground to a laser-thin profile, delivering exceptional sharpness at an outstanding price point. The blue pakkawood handle is moisture-resistant and comfortable for extended prep sessions. Made in Echizen, Japan's historic blade-making region.
