This 200mm Chinese cleaver is a versatile, all-purpose blade: lighter than a butcher's cleaver, it is designed for slicing, dicing, and chopping vegetables and boneless proteins with speed and precision. At just 198g, it is nimble in the hand. High carbon steel at 58 HRC takes a keen edge and develops a natural patina with use. One-of-a-kind and not available anywhere else.
