The Nakiri
Koutetsu knives are designed by Takayuki Shibata - one of Japan's foremost knife sharpeners and craftsmen - with an uncompromising focus on thinness behind the edge and exceptional cutting geometry. The Chromax RO Boss series uses Chromax stainless steel, a high-hardness stainless alloy that achieves 63-64 HRC without the reactive nature of carbon steel. The sanmai construction wraps the hard Chromax core in stainless cladding, protecting the blade flats and making the knife easy to maintain. The migaki polished finish gives the blade a refined, clean aesthetic. The nakiri is Japan's dedicated vegetable knife - a flat-edged, double-bevelled blade designed for push cuts and pull cuts through vegetables with minimal resistance. At 170mm it is the ideal length for both home and professional prep work, excelling at julienne, brunoise, and fine vegetable work.
