The Gyuto
Koutetsu knives are designed by Takayuki Shibata - one of Japan's foremost knife sharpeners and craftsmen - with an uncompromising focus on thinness behind the edge and exceptional cutting geometry. The Chromax RO Boss series uses Chromax stainless steel, a high-hardness stainless alloy that achieves 63-64 HRC without the reactive nature of carbon steel. The sanmai construction wraps the hard Chromax core in stainless cladding, protecting the blade flats and making the knife easy to maintain. The migaki polished finish gives the blade a refined, clean aesthetic. The gyuto is the Japanese interpretation of the Western chef's knife - versatile across meat, fish, and vegetables, capable of push cuts, pull cuts, and fine slicing. At 210mm it is the most practical all-round length for both home and professional use.
Care & Maintenance
- Hand wash only - never dishwasher
