The Keskin Migaki Kiritsuke 230mm is hand-forged in Magetan, East Java by Omar and his team of local blacksmiths and craftsmen - blending traditional Japanese knife-making techniques with Indonesian materials and artistry. The amboyna burl handle and blonde buffalo horn ferrule make this a genuinely collectible piece, and the included amboyna sheath keeps it protected between uses.

Handcrafted in East Java

Keskin knives are made by Omar's workshop in Magetan - a region with a long tradition of blade-making - working alongside experienced local blacksmiths and craftsmen. The kiritsuke profile combines the flat heel of a usuba with the pointed tip of a yanagiba, making it a versatile single-bevel-inspired shape suited to slicing, push-cutting, and fine vegetable work. The 5160 steel is a tough, impact-resistant carbon steel that takes a keen edge and responds well to whetstone sharpening. The amboyna burl handle is one of the most visually striking handle materials available - each piece unique in its grain and colour.

Care and Maintenance

  • Hand wash only - never dishwasher
  • Dry immediately after use - 5160 carbon steel will rust if left wet
  • Apply a light coat of food-safe oil if storing for extended periods
  • Expect a natural patina to develop with use - this is normal and protective
  • Sharpen on a whetstone to maintain the edge
  • Store in the included amboyna saya when not in use
