The full tang construction runs the steel the full length of the handle, giving this gyuto exceptional balance and durability. L6 Kanefusa steel is a tough, high-performance carbon steel with good edge retention and toughness. The teakwood burl handle is individually crafted - the grain and figure of each piece is unique. The matching teakwood burl sheath completes the set and protects the edge during storage and transport. A knife that is as impressive on the bench as it is in the hand.
Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing to prevent rust
- Apply a light coat of camellia or food-safe mineral oil to the blade periodically
- Condition the wooden handle and sheath with a food-safe wood oil occasionally
- Sharpen on a whetstone - carbon steel responds well
- Store in the included sheath or on a magnetic strip
