Where This Stone Fits in Your Sharpening System

The 1000/4000 combination is the most practical single stone for regular home sharpening. The 1000 grit side handles the majority of sharpening work - removing enough metal to restore a dull edge without being so coarse it requires extensive follow-up. The 4000 grit side then refines the scratch pattern left by the 1000 grit, producing a noticeably sharper and smoother edge. For most cooks, this stone alone covers 90% of their sharpening needs. For a full mirror polish, follow with the 8000 grit finishing stone.

How to Use

  • Fill the case top with water to the fill line and soak the stone for 5-10 minutes
  • Place the stone in the ribbed base - fill the base reservoir with water to keep the stone wet
  • Start with the 1000 grit side to restore the edge - sharpen at 16° for Japanese knives
  • Move to the 4000 grit side to refine and begin polishing
  • Keep the stone wet throughout - add water as needed
  • Rinse and dry after use, store in the case flat to prevent warping
  • Flatten periodically with a leveling stone
