The K Sabatier Slicing Knife 250mm in High Carbon Steel with Olive Wood Handle is forged in Thiers, France - the longer slicing blade for covering the full length of a large roast or whole salmon in a single uninterrupted stroke, fitted with a natural olive wood handle that makes it as beautiful at the carving board as it is precise.

One Stroke. Perfect Slices.

At 250mm, this blade covers the full length of a large roast or whole side of salmon in a single pull-stroke - no repositioning, no sawing, no tearing. The long, narrow profile minimises surface contact with the meat, reducing friction and delivering thinner, more even slices than a chef's knife ever could. High carbon steel holds a finer, longer-lasting edge than stainless, keeping every slice clean and precise. The natural olive wood handle is hand-set on the full tang with stainless steel rivets - each one unique in grain and colour, warm in the hand, and more beautiful with age.

Care & Maintenance

  • Hand wash only - never dishwasher
  • Wipe dry immediately after use - high carbon steel will rust if left wet
  • Apply a light coat of food-safe oil occasionally to protect the blade
  • Keep the olive wood handle dry - do not soak or leave damp
  • Feed the olive wood handle occasionally with a food-safe wood oil to keep it conditioned
  • A natural patina will develop on the blade with use - this is normal and protects the steel
  • Store on a magnetic strip or in a knife block to protect the edge
