Experience the Perfect Slice, Finished in Olive Wood
The K Sabatier Slicing Knife 200mm in High Carbon Steel with Olive Wood Handle is forged in Thiers, France - a long, narrow slicing blade for carving roasts, slicing salmon, and cutting through any large protein with a single clean stroke, fitted with a natural olive wood handle that makes it as beautiful as it is precise.
The Specs
- Steel: High carbon steel, forged in a single mass - 54-56 HRC
- Blade length: 200mm (8 in.)
- Handle: Natural olive wood, hand-set on the tang with stainless steel rivets
- Construction: 100% forged - tempered, ground, and polished crosswise
- Origin: Handcrafted in Thiers, France
Long, Lean, and Effortlessly Sharp
The slicing knife's long, narrow profile minimises surface contact with the meat, reducing friction and delivering thinner, more even slices than a chef's knife ever could - no sawing, no tearing, no lost juices. High carbon steel holds a finer, longer-lasting edge than stainless, keeping every slice clean and precise. The natural olive wood handle is hand-set on the full tang with stainless steel rivets - each one unique in grain and colour, warm in the hand, and more beautiful with age.
Care & Maintenance
- Hand wash only - never dishwasher
- Wipe dry immediately after use - high carbon steel will rust if left wet
- Apply a light coat of food-safe oil occasionally to protect the blade
- Keep the olive wood handle dry - do not soak or leave damp
- Feed the olive wood handle occasionally with a food-safe wood oil to keep it conditioned
- A natural patina will develop on the blade with use - this is normal and protects the steel
- Store on a magnetic strip or in a knife block to protect the edge
