The K Sabatier Difference

The slicing knife's long, narrow, rigid blade is designed for one purpose: clean, thin slices of meat, poultry, and fish with minimal effort and maximum precision. The narrow profile reduces drag through the cut, and the rigid blade maintains a consistent angle from heel to tip. Carbon steel takes a finer, keener edge than stainless and responds exceptionally well to sharpening - the more you use and maintain it, the better it performs. The olive wood handle, secured with three stainless rivets, brings warmth and character to the bench.
Care & Maintenance
- Hand wash only, never dishwasher
- Dry immediately after every use - carbon steel will rust if left wet
- Rinse immediately after contact with acidic foods or salt
- Apply a light coat of food-safe oil if storing for extended periods
- Expect a natural patina to develop over time - this is normal and protective
- Do not soak or leave the olive wood handle wet
- Occasionally treat the olive wood handle with a food-safe wood oil to keep it conditioned
- Sharpen with a whetstone - carbon steel responds exceptionally well to sharpening
