The Smallest Blade. Total Control.
At 80mm, this is the paring knife for cooks who want complete control over the tip and edge - peeling stone fruit, segmenting citrus, trimming herbs, and all the fine detail work that demands precision over power. Carbon steel takes a finer edge than stainless and holds it longer through repeated use, making every peeling stroke cleaner and every trim more precise. Forged from a single mass of steel, the blade, bolster, and tang are one continuous piece for exceptional balance even at this compact size. The black POM handle is hand-set on the full tang with three brass rivets.
Care & Maintenance
- Hand wash only - never dishwasher
- Wipe dry immediately after use - carbon steel will rust if left wet
- Apply a light coat of food-safe oil occasionally to protect the blade
- Sharpen with a whetstone or professional sharpening service when needed
- A natural patina will develop with use - this is normal and protects the steel
- Store on a magnetic strip or in a knife block to protect the edge
