The K Sabatier Flexible Slicing Knife 200mm is the flexible variant of the Au Carbone Olive Wood slicing range - a long, narrow blade forged from a single piece of carbon steel that bends to follow the contour of the meat, keeping the edge in contact with the surface for cleaner, thinner slices with less effort.

The K Sabatier Difference

K Sabatier has been forging knives in Thiers - the knife-making capital of France - for generations. The flexible slicing knife's long, narrow blade bends under light pressure, allowing it to follow the natural contours of a roast, ham, or whole fish - hugging the bone and skin to maximise yield and minimise waste. Where the rigid slicing knife excels at straight, even cuts, the flexible blade is the choice for curved surfaces and delicate proteins where a rigid blade would tear or drag. Carbon steel takes a finer, keener edge than stainless and responds exceptionally well to sharpening. The olive wood handle, secured with three stainless rivets, brings warmth and character to the bench.

Care & Maintenance

  • Hand wash only, never dishwasher
  • Dry immediately after every use - carbon steel will rust if left wet
  • Rinse immediately after contact with acidic foods or salt
  • Apply a light coat of food-safe oil if storing for extended periods
  • Expect a natural patina to develop over time - this is normal and protective
  • Do not soak or leave the olive wood handle wet
  • Occasionally treat the olive wood handle with a food-safe wood oil to keep it conditioned
  • Sharpen with a whetstone - carbon steel responds exceptionally well to sharpening
